Oatmeal Cookies

Finally, give into your cravings and enjoy an oatmeal dessert for breakfast. We promise not to tell your inner-child that it’s actually a nutritious way to jump-start your day.

Ingredients:
1 cup uncooked oatmeal
1 cup dried fruit (raisins, cranberries, cherries)
1 full scoop vanilla protein powder–Transitions
1 cup shredded coconut
1/3 cup nuts (optional)
2 egg whites
1 tsp. vanilla
1 ripe banana
1 Tbsp. agave nectar
dash cinnamon
nonstick cooking spray (olive oil spray)
Directions:
- Pre-heat oven to 350′.
- Mix Dry Ingredients seperately from moist.
- Stir all ingredients together.
- Lightly coat a baking sheet with nonstick cooking spray.
- Scoop rounded spoonfuls of dough onto sheet.
- Bake 20 minutes.
Yields 2 dozen cookies.
