French Onion Soup
Health Benefits of Onions

Ingredients:
1 tablespoon butter/canola-oil blend
4 cups thinly sliced onions (about 4 medium onions)
2 – 14.5 oz. cans of Beef Broth
2 teaspoons Worcestershire sauce
1/2 teaspoon black pepper
4 slices French or Rustic Bread
4 slices Swiss or aged Provolone Cheese (about 4 ounces)
4 teaspoons grated Parmesan Cheese
Directions:
- Melt butter in a Dutch oven over medium heat. Add onions and cook about 10 minutes. Reduce heat to low and cook, stirring occasionally, for another 30 minutes, until the onions are very golden.
- Add broth, Worcestershire sauce, and pepper and bring to a boil. Reduce heat and simmer 20 minutes.
- Preheat broiler. Arrange bread slices on foil-covered baking sheet. Top each bread slice with 1 slice of cheese and 1 teaspoon Parmesan cheese. Broil for about 2 minutes, until cheese has melted and is golden.
- Ladle soup into 4 individual bowls and top each with 1 slice of the toasty cheese bread.
Yields 4 Servings.
