Ingredients:
4 cups peeled, seeded and thinly sliced cucumbers (about 4 medium cucumbers)
1 cup thinly sliced Vidalia or Red Onion
1/2 cup cider vinegar
2 tablespoons Xagave Natural Sugar
1/2 teaspoon salt or replace with one of these herb and spices combination
1/2 teaspoon black pepper
Directions:
- Combine ingredients in a medium bowl and toss well to coat. Cover and chill at least 2 hours or overnight before serving.
- One variation is to use balsamic vinegar for cider vinegar.
- Another variation is to add 2-3 sliced Roma tomatoes.
- Yet another variation is to add 1 tablespoon chopped fresh dill.
Yields 6 Servings.
