Chicken Enchiladas

These chicken enchiladas are delicious and spicy. If you like just a little more kick to your chicken, you’ll love this recipe. Easy to make and pleasing to the eye.
Ingredients:
1.5 cups shredded chicken breast
3 oz. low-fat or fat free cream cheese
1 cup shredded reduced fat cheddar
1 cup onion, chopped
1/2 tsp ground cumin
1/2 tsp chili powder
1 cup Picante Sauce (lowest sugar)
1 cup Green Taco Sauce (lowest sugar)
8 whole wheat low carb tortillas (lowest sugar)
Directions:
- Preheat oven to 350F.
- In a large skillet, cook onion until golden brown, about 5 minutes.
- Add the chicken, cream cheese, picante sauce, chili powder, cumin, and cheddar cheese. Cook until well combined & cheese is melted.
- Spray a 9 x 13 inch with cooking spray.
- Using the tortillas, wrap the chicken mixture & place in baking pan.
- Pour taco sauce over top & put in oven until heated through.
Yields 8 Servings.
