Cheddar and Ham Muffins

This quick and easy breakfast entree is a great low-gi wellness solution. The ham is a great substitute for the fatter saturated bacon or sausage in typical diets.
Ingredients:
3/4 cup low-fat sharp Cheddar cheese
1/4 cup fresh grated Parmesan cheese
1 3/4 cup reduced fat all-purpose baking mix
1 cup low-fat skim milk
1/2 teaspoon black pepper
1/4 cup low-fat ham, finely chopped
Directions:
- Preheat oven to 400°F.
- Mix cheeses, milk, and baking mix together; add pepper and ham.
- Mix well and spoon into lined muffin pans 1/2 full.
- Bake 12-15 minutes or until golden brown.
Yields 9 Muffins.
