Blueberry Smoothie

What a terrific way to start your day. Blueberries are loaded with antioxidants; and soy gives you long-lasting protein. Who needs sugar?
Ingredients:
¾ cup plain soy milk
¾ cup tofu
1 cup blueberries
1 teaspoon fructose, optional
½ teaspoon vanilla
Directions:
- Press tofu between paper towels to remove excess water.
- Place all ingredients in blender or food processor and blend until smooth and creamy.
- Drink immediately.
- Tofu turns dark and the drink loses its creaminess when left for a period of time.
Yields 2 Servings.
